Roughly one year ago, my roommate Alex and I had the idea to start selling fresh juice at the Thursday night farmers market on Higuera St. We quickly realized the high overhead cost involved with juicing, so I decided to consult my good friend Molly who had just returned from working with a few wineries in Spain. Over an acaí bowl at Sally Loo’s Wholesome Cafe, we decided that kombucha would be a

great product due to the numerous health benefits and low overhead cost. With almost no convincing necessary, Alex, Molly, and I came together under the name Komplete LLC. We quickly raised $10,000 through Kickstarter.com, an organization that allows outside parties to invest in up-and-coming businesses. Those funds have enabled us to purchase brewing equipment, health permits, kitchen rental, and insurance. Yet, we still did not have the formula down to create the best kombucha on the planet. Through much trial and error, while juggling our day jobs, we were able to create what we find to be a superior kombucha product. We currently sell Komplete Kombucha on tap at Bliss Café in downtown San Luis Obispo. The only dilemma we face is that we have not been able to produce it fast enough to keep up with demand! This will soon be resolved since we have just ordered more equipment to produce much larger batches. Where do we see this taking us and why San Luis Obispo? San Luis Obispo has been a home to the three of us collectively for 12 years. We love this town and the health minded people in it! We feel that if there is one place to promote a new and healthy product, San Luis Obispo is the place! Our current goal is to create a steady production of Komplete so that Bliss Cafe is always well stocked. We do want to plan ahead but one day at a time or should I say one keg of Komplete at a time. For those of you unfamiliar with kombucha, it is a tangy, mildly sweet, and effervescent beverage that can be consumed alone or with food that generally goes well with beer. Our kombucha is slightly alcoholic (>0.5%), but not enough to legally deem it an alcoholic beverage. It is consumed for its delicious taste and probiotic content.

Baby Booch and I made it to Cabo sailing ⛵️ from San Diego! 🇲🇽 We battled storms 🌊⛈️, broken equipment 😩, and bad weather predictions 🗺️, but morale couldn't be higher. We almost thought we had a glimpse of a group of Whalebirds, but it turns out they were humpback whales- distant Whalebird cousins. The hunt continues. 👀🔎
