I went to a fancy culinary school; they didn’t teach me anything about what it actually takes to open a place. It was more like 'how your julienne carrots could be cut straighter.' Just thanks to everyone involved, and a big shout out to the team holding it down in Ryse Sandusky. I’m proud of you all! 🤞 Fingers crossed I can make a big announcement tomorrow.

Cool Crisp Pickles.

If you’re from the Thumb, you probably already know them.

Our Pickle Pizza starts with Cool Crisp Pickles from Gielow’s in Lexington, layered over mozzarella made from 100% Michigan milk, then finished with our signature Ryse Ranch made with Guernsey Farms buttermilk. And of course, it all sits on fresh dough made in-house daily.

The more we thought about it, the more we realized this might be the most Michigan pizza on our menu.

Local pickles. Michigan dairy. Fresh-made dough.

People say it’s the best, but we take that with a grain of salt. Why don’t you be the judge?

Breakfast pizza is one of those things that seems simple… until you start looking online.

We’re kicking around the idea of adding one at Ryse, and apparently there are about a thousand different versions.

My first thought was a biscuit gravy base, topped with sausage, bacon, scrambled eggs, and a mozzarella-cheddar blend.

But I’ve seen everything from hash browns to peppers and onions, cheese sauce, and even hollandaise.

So I’m curious…

What belongs on a breakfast pizza?

What’s your ideal combination?

I’m just gonna say it. I don’t personally like pineapple on pizza. Before everybody grabs their pitchforks, hear me out.

My issue isn’t really the flavor. My wife likes it, and I’ll occasionally eat a slice. Truth be told, all I really need is a good pepperoni pizza. 🍕

It’s more of a pizza nerd thing. Pineapple is loaded with water, and as that moisture evaporates, it cools the surface of the pizza. That makes it harder to get that beautiful golden-brown cheese and crust that I’m always chasing.

To be fair, lots of vegetable toppings do the same thing. Pineapple just happens to be the biggest offender.

That said… taste is subjective. I don’t eat anchovies either 🐟 and I carry those.

So if pineapple belongs on pizza in your world, I’ve got your back. If it doesn’t, I’ve got your back too.

Love it or hate it, there is no right or wrong answer.

Meet Josie. She’s my rescue Hobart M803 80-quart.
Named after Joe’s Pizzeria. I spent about 3½ hours straight cleaning and scrubbing this thing today and I’m not gonna lie… somewhere along the way I got a little emotionally invested. 😂

Little greasy. Little neglected. Probably hadn’t had somebody care this much in a while. But she cleaned up pretty good.

We’re family now, Josie. I’ll never let anybody hurt you again.
