Ever wonder why we're called RubyMac's? What's in a name, anyway?

For us, a lot of family history! Joanna, our founder, named this business after her maternal grandparents, Ruby and Ranald "Mac" MacDonald as a tribute to their memory and the legacy they've left within her family.

Ruby had a passion for ham radio and aviation. In the 1960s, she was a member of the Antique and Experimental Aircraft Association and served as secretary of the Silver Wings Flying Club in Green Bay, WI. Her ham radio call sign, ‘XYL,’ was a nod to her role as a female operator.

Mac was also an aviation hobbyist. He owned a few different puddle jumpers including a bright yellow Piper Super Cub. He took his kids and their friends out for rides in the skies and these adventures left lasting impressions on them. In the 1960s, he was a member of the Antique and Experimental Aircraft Association and the Silver Wings Flying Club.

RubyMac's Coffee is a way of honoring the lives of these incredible ancestors and keeping their spirit alive in Joanna's own endeavors.

Mac’s Piper Roast is all about comfort and balance. It's a solid favorite for a reason.

This light–medium roast, made from the Caturra variety, offers warm notes of wild berries and chocolate with a subtle hint of something deeper that keeps each sip interesting. It’s approachable, steady, and satisfying—a great choice when you want a cup that feels familiar but still has character.

Joanna, our founder, named this roast after her maternal Grandfather and his love of flying his Piper Super Cub airplane!

If you're in the planning stages, stop by the Wedding Expo at —this Sunday from 2-5—to meet some of the awesome local vendors who can help make your celebration of love everything you want it to be. We had such a wonderful time serving our friends at during the New Mexico Legislative Session. They hosted a beautiful breakfast at the Inn & Spa at Loretto for invited legislators, and we were honored to keep guests fueled with handcrafted espresso drinks all morning long ☕

It was a joy to bring the RubyMac’s cart experience to such a thoughtful gathering. If your organization is planning a corporate breakfast, legislative reception, or employee appreciation event, we’d love to serve you and your guests.
