• The secret to a great sugar cookie? Don't rush it. Chilling the dough overnight creates a richer flavor and helps the cookies bake up with the perfect texture.

Chef's Classic Sugar Cookies
Ingredients
2½ cups all-purpose flour
2 teaspoons baking powder
¾ teaspoon fine sea salt
8 ounces unsalted butter, softened
1¼ cups granulated sugar
¼ cup additional sugar for rolling
1 large egg
1 egg yolk
1 tablespoon vanilla extract
Directions
Preheat oven to 350°F and line baking sheets with parchment paper.
Whisk together the flour, baking powder, and salt.
In a separate bowl, beat the butter and 1¼ cups sugar until light and fluffy, about 2–3 minutes. Add the egg, egg yolk, and vanilla. Mix until combined, then slowly add the dry ingredients.
💡 Chef's Tip: For the best flavor and texture, chill the dough overnight before baking.
Scoop into large balls (about 3 tablespoons each), roll in the remaining sugar, place 2 inches apart on the baking sheet, and gently flatten with the bottom of a measuring cup.
Bake for 10–12 minutes, just until the cookies are set and the edges begin to turn golden. Let cool for 5 minutes before transferring to a wire rack.
