A tribute to the foreign cities I lived in the longest, Paris and Shanghai. Galantine the classic French preparation and Drunken Chicken, classic Chinese. We switched in Vin Jaune (French “Yellow Wine” from the Jura) for Shao Xing rice wine as a twist. They’ve always been adjacent in my mind. -Eric
