In Japan, there's a long-standing tradition of enjoying unagi during the height of summer to restore energy and beat the heat. This custom is celebrated on Doyō no Ushi no Hi (土用の丑の日), the Midsummer Day of the Ox.

To celebrate this beloved tradition, Chef Taichi invites you to a special Unagi Pop-Up Lunch on Saturday, July 25.

We are delighted to invite you to Oryori Taichi #3: Peak Season – Harvest of Seattle on Sunday, July 12, 2026.

This special dinner celebrates the height of Seattle’s growing season and the incredible bounty of the Pacific Northwest. In the days leading up to the event, Chef Taichi will personally visit local farmers markets to hand-select the finest seasonal ingredients at their peak, allowing the week’s harvest to inspire each course.

Rather than following a predetermined menu, the evening will unfold as a seasonal tasting experience shaped by the freshest produce, seafood, meats, and artisan products available that week. Each course will highlight the natural flavors of the region while honoring the farmers, fishers, and artisans whose dedication brings these exceptional ingredients to our table.

Seattle’s farmers markets offer some of the finest ingredients anywhere, and we look forward to transforming that seasonal abundance into a thoughtful, memorable dining experience.

2026 Chef Taichi’s Ultimate Expression

A One-Night Tasting Experience
Join us for an intimate culinary evening showcasing Chef Taichi’s most original creations and exclusive seasonal ingredients.

This special dinner will highlight a Copper River Salmon theme, alongside celebrated Pacific Northwest seasonal ingredients, served at the sushi bar for just 10 guests.

During dinner, guests will have the unique opportunity to join a live FaceTime conversation with Nelly Hands, the fisherman who personally caught the Copper River salmon featured that evening — offering a rare connection from ocean to sushi bar.

For those interested, guests are also invited to join Chef Taichi the day before the dinner for a visit to the University District Farmers Market to meet local vendors and experience the ingredients and community behind the menu.
