There's more to oysters than "months that end in R." Check out how Jamestown Seafood gets the oyster seed started. Would you believe that many oyster farms rely on getting their seed from hatcheries off the coast of Kona, HI?

But isn't the water warmer there you ask? The hatcheries operate in deep, pristine, cold water where the conditions are just right to grow the algae needed for sustaining the seed until it's viable enough to be shipped out to farms.

Did you know...?
An 🦪oyster's🦪 flavor can tell you where it came from. Oyster lovers use the word “merroir”—a play on wine's terroir—for the way salinity, minerals, algae and local water conditions influence an oyster's flavor.

TL;DR: We got some rad oysters in! They're not creamy! 🦪😁🦪

Cairns are back! A fan favorite has returned just in time for Fall. These little baddies come from Dabob Bay, WA and are tumbled, crisp, and lightly briney. This batch of oysters are triploid, meaning they have three sets of each chromosome. Triploid oysters are sterile so there is no creamy taste or soft mouthfeel often present in the warmer summer months with the naturally occurring diploid oysters (two sets of chromosome). Come try some with our house-made mignonettes: Classic, Yamash*ta, and Ch*****ne Snow. Stay Salty, Friends! 🧂🤙
