Come get your free Bruce Wammich!!!
It’s taken me a little while to find the words to write this.
The Oso team recently lost a dear friend, former team member, mentor, and one of our earliest supporters — Chef Bruce.
Bruce believed in what I was building at Oso from the very early on. His enthusiasm, encouragement, and years of culinary knowledge were integral to our early days. He generously shared his experience with our team, helping shape some of the core standards we still hold today.
We were honored to be the last kitchen he worked in, something that meant a great deal to both of us. His praise, his genuine encouragement, and his belief in what we were doing helped keep me going through some of the more challenging moments of building a restaurant.
Bruce had a dream of his own — one I deeply admired. He, along with his lovely partner, envisioned creating a culinary program where he could share his knowledge and teach others the joy, creativity, and love of this industry. Unfortunately, that dream was cut short when his health took a turn.
As the idea of The Warren began to come to life, and the reality that Bruce's cancer was winning, he asked me to carry on a small piece of his legacy.
Bruce had helped develop the name and concept of his version of the Wammich, intending to incorporate it into his future culinary program. He asked me if there might be room for his creation on our menu at The Warren.
Many of you have since enjoyed a Wammich, perhaps without knowing the story behind it. One of those creations, The Bruce, was our own little menu surprise for him.
We also had the privilege of catering Bruce’s living memorial. Seeing so many people from different chapters of his life come together — people he had taught, mentored, inspired, cared for, and undoubtedly entertained — was incredibly moving. It was a beautiful reminder of just how many lives one person can touch. And how food not just feeds the body, but the soul.
He was a character, to say the least. Funny, flawed, fiercely loyal, endlessly creative, deeply caring, and equal parts cantankerous. He had his opinions, his stories, and his own particular way of doing things. He could make you laugh, drive you crazy, and make you feel genuinely appreciated, sometimes all in the same meandering conversation.
In honor of our dear friend, gone far too soon, we will be giving away The Bruce Wammich to anyone who would like one this Monday, October 26th, at The Warren.
The Bruce is a buttermilk waffle layered with marionberry jam, creamy Brie, pistachios, and just a pinch of nutmeg. A little sweet, a little nutty — just like Bruce.
Throughout the month of November, we will donate $1 from every Wammich sold at The Warren to the Silverton High School Culinary Program. Our hope is to make this an annual tradition, supporting the next generation of passionate culinary professionals in the spirit of a chef who believed so deeply in sharing his knowledge and love for the industry.
Rest easy, dear Bruce.
And thank you, Chef.
