Letter #23 💌 a matcha latte inspired by our GM, Val Jones, and memories of listening to “Strawberry Letter 23” with her mom in the spring. 🍓🌱🌞🍵

Written and recorded by Shuggie Otis in 1971, the song is a love letter 🥰 and this drink is our take on that sweeter-than-middle-school strawberry milk kind of nostalgia.

“Scratch biscuits, strong coffee, no mystery.”

Last week, we visited our friends and coffee partners at Bigfoot Biscuit in Blue Ridge, Georgia. ☕🫈 The cafe is located within The Dogwood, a sister restaurant and bar concept by owner Brandon Lofton. This hangout celebrates the mountains, local lore, and good food and hospitality. We’re proud to roast fresh craft coffee for Bigfoot Biscuit and their team, led by Chef Janyea.

👩‍🍳 Chef Janyea recommends: The Grassman biscuit with a fresh cup of Consensus Blend for breakfast, The Big Sexy burger and fries from The Dogwood for lunch with a local ale, and for dinner, an espresso martini and ribeye from The Black Sheep. 🌟

The Black Sheep is another member of the family, but this sibling is led by Chef Mike Hurn, who brings fine dining to the table just two doors down from The Dogwood and Bigfoot Biscuit. Rounding out Ripple Restaurants group, led by VP of Operations Shaun Alber, are Grace Prime Steakhouse, also in Blue Ridge, and Cartecay River Brewing Co. in Ellijay. 🍻

We love partnering with businesses like Lofton’s that care about quality, hospitality and creating places people want to hang out. Through our wholesale program, we’re proud to support restaurants, cafes and teams with fresh coffee, training and service. 💛

Rachel’s Inspiration 🌞🍑💦⚽🍋‍🟩🥥☕🔥

For the hot humid summers of Georgia; a Sproda (espresso with soda) is one of the superior options for enjoying punchy, energizing espresso with sweet, refreshing soda. It’s a great option for those who find milk (a la lattes, cappuccinos, etc) dense on the stomach in the heat. The tangy flavor of lime may be considered too acidic to pair with an already acidic espresso, but with the sweetness of the coconut resolves all offenses to the taste buds.

For classic espresso drinks like espresso tonics, or in this case sprodas, “floating the shot” is an important aspect of the process. Pour too fast and the drink foams up. For the best consistency, take a metal spoon to the surface of the liquid angled down and (very, very) slowly pour the espresso shot over the rounded part of the spoon. The espresso should slowly trickle into the cup and cause it to “rest” on top of the lime Jarritos. Once the entire shot rests on top of the drink, slowly dip the spoon into the drink to the bottom of the cup. Continue the process until the espresso and soda are combined without stirring in a circular motion. This drink is perfect for sitting by the pool, strolling with friends, or cheering on your country during the 2026 World Cup!
