Step 1: Season and sous vide short rib for 4 hours.
Step 2: Grill for a nice crust and thinly slice.
Step 3: Lay over a bed of steaming rice with tare (our house yakitori sauce with over 20 ingredients and steeped and simmered overnight), sansho, toasted sesame, ao nori, wasabi and a side of dashi broth.
