🧀 This beautiful grazing table took 3 of us to accomplish. We try to always time out every ingredient as much as we can to make sure cold items go out as late as possible before party time. This is portioned out accordingly into snack portions based on the amount of guests expected, the goal is never to have a lot of waste! Hosts are always informed of timing for temperature and time safety on the food and when to pull or toss items. There’s a process and method to the madness. ☺️
🧀 This is why it’s always important to hire legally operating & professional caterers for your events. They are licensed through the state and counties, which means they’ve had to go through & pay for other certifications and training beforehand. And yes, this often means a higher price tag.
🧀 For some reason with charcuterie, people often assume it’s a job you can do from home. It’s actually illegal to make and sell charcuterie from home. So when people do it from home and don’t have to pay all those taxes and overhead - it’s disheartening to those doing it the right way and are just trying to make a living doing what they love and pay the bills. It’s not like baking, which falls under the cottage law since we work with meats & cheeses. Everything is prepped in a certified and health inspected commercial kitchen. Time & temperature safety, and the understanding of that with food is so important!
🧀 So much goes into it. It’s not just a hobby, it’s really my job and I’m always going to do it with excellence & to the best of my abilities. ☺️ All the added expenses we pay whether it’s the yearly licensing, monthly bills for overhead, supplies etc, to operate legally is for your safety. 🩷
