Three years ago, the PublicHouse owners asked me if I wanted to open up a Pizza/BBQ since I was going to open the second location of Moi Poki Grill there. I said Why Not?! I never had a pizza place let alone a barbecue place before. I just know how to make them. Having a location inside PublicHouse, it’s all about efficiency, quick and easy but also of quality and taste. From a business model, I knew I could do it. And I did. I created a Menu, opened Pizza Cue first and then a month later, opened the second Moi Poki Grill side by side. Everything was created inside my head, recipes, names of the different pizzas and made all the sauces from scratch. The first year wasn’t so bad because then Covid happened. Rob also jumped in and helped me A LOT! But then I decided to open a third location of Moi Poki Grill. So I had four places going. Well, as most of you know, it is hard to find good reliable employees. Let alone find good employees who can make your food exactly the way you want them to. PublicHouse is a beast, it’s busy! And so as Beergarden and the new place on Broadway. Rob and I found ourselves working long hours all days of the week. AND he has another job that he loves and pays well. So he was also working doubles. I love him for it though because I knew he was doing it all for me. But I think he also got into the barbecue thing and also enjoyed making the food. BUT, we didn’t have much time to do anything else outside of work. We love to go fishing, camping and going on trips. We had to paused all that. And when we did have an opportunity to have a day off or go somewhere, we ended up talking or being frustrated about work. We were still on work mode even if we weren’t there. So, the decision was finally made this year that I needed to simplify and downsize. With that said, we closed Pizza Cue on Sunday. And we are happy with that decision. It doesn’t feel like I’ve failed. It just proves that I can do anything, start a business and make it successful and know when to quit when it’s not working out. I am looking forward to being less busy and enjoying life more. Finally. ❤️ PS. Sorry if this is TLDR 😅
