Hey Springfield....you have been so patient with us as we get our kitchen up and running. We want to at least explain what is going on. We were ready to get the restaurant going again back in March. Just when we were ready to turn in the order to food service we felt like our heart was not in it. I guess it is a matter of both of us moving on to new concepts. Once we knew...and decided not to re- open....lots of new opportunities popped up. We are running two businesses now....one as a wholesale food provider to other small businesses in Minnesota and Iowa. ...and a vegan catering business in Iowa. If you really want Solar to open.... we are interested in leasing the space to another food startup for part of the week. Send us a direct message with ideas you might have. Thank ❤you!

Here is an interesting article and quiz that helps you see if you are an Epicurean or a Visceral eater. When we first opened Solar our mindset was on calories per dollar. As we started enjoying tastes and trying different foods we realized much of what this article explains:

"Epicurean eaters, who prefer smaller food portions, report a higher wellbeing than visceral eaters."

Research shows it’s all downhill after the first bite.

Sounds wonderful!

I'm originally from Minnesota, where wild rice grows in abundance and is very popular in recipes. This soup has been part of our Christmas Eve menu for years. To save time, I cook the chicken and wild rice and cut up the vegetables the day before. —Virginia Montmarquet, Riverside, California
