Some times you have to start the day before if you want good results the next day. 11lb pork tenderloin, scored, added a little Olive Oil and a lot of Meat Church Honey BBQ rub. Will let it sit over night in refrigerator . Then put it on the smoker tomorrow. Once it reaches 145 degrees internal I will pull it off and let it rest for about 2 hours. Then slice and eat. Smoke 'em if ya got 'em.
