The Local Loaf begins just down the road, with wheat and spelt grown with care and stone-milled at Carolina Ground in Hendersonville. The grain passes slowly through the millstones, the way it has for generations, keeping its full character intact—nothing stripped away, nothing rushed.
In our bakery, we treat that flour with the same patience. Long fermentation, gentle handling, and time to let the dough speak for itself. Baked as a pan loaf, it comes out with a soft, even crumb—no big holes, no fuss—just a slice that’s ready to carry butter, jam, cheese, or whatever the season brings to your table.
This is the kind of bread we grew up with in Northern Europe. Everyday bread. Honest bread. The one that sits quietly on the counter and somehow becomes part of every meal.
