It is with enormous sadness that we announce the closure of Scratch Bakehouse bakery at 446 East Brighton Ave and Scratch Bakehouse Cafe at 629 West Fayette Street in Syracuse, New York. In short, it became impossible to attain and maintain staffing that was continuous and/or committed and/or desired to maintain the very difficult, complex and physically and mentally demanding requirements of sourdough bread baking, and perhaps my expressions and methods to achieve expectations of service for our very loyal and wonderful customers.
We will always be happy to have introduced to Syracuse first the great French pastries and bread of Yemen Tounsi, then, knowing that Yemen’s shoes could never be filled, seeking to make a different bread product, all sourdough breads, widely and regularly available to the Syracuse market.
I know that our closure may result in an unwanted change in diet, but hopefully a sourdough baker will emerge to take our place. In the meantime I can point you to the cottage bakery of Salt City Bread (saltcitybread.com) and the cottage baker Maxx Arnold sometimes found at The Cracked Bean Roastery market booths. They are real and worthwhile. And as for the very finest bakery goods and cakes, including wonderful croissant, always The Sweet Praxis , and for fun, of course Glazed & Confused
I will miss many things but none more than the daily interactions with the most wonderful and loyal customers any business ever had. Thank you for that gift.
