If you haven't been in yet, tonight (opening at 5pm) is the perfect night to come meet the heart of our kitchen - Chef Joe Messier!
Born and raised right here in Ticonderoga, Joe's love for food started young - baking with his mom before he ever knew it would become his life's work. His very first kitchen job was here at The Firehouse under the previous owners, and coming back to lead this kitchen has been a true full-circle moment for all of us.
Joe went on to study at SUNY Cobleskill, where he developed a deep passion for farm-to-table cooking through hands-on work in agriculture, fisheries, and wildlife. He then spent years honing his craft in kitchens across Maine, New York, and Florida - from The Small Point Club in Bath to Tavern by the Bay in Naples - before coming home to Ticonderoga, where he belongs. In Ti, Joe has contributed his talents to local institutions including the Employees Mutual Association and Knights of Columbus #333.
An avid outdoorsman, Joe forages wild mushrooms and edible flowers and weaves them right into his dishes — and the results speak for themselves. Joining him is his fiancée Molly, who serves as restaurant manager and of course their adorable son Beau. Together, they've become an integral part of the Sullivan family and are at the heart of everything we're building on Graphite Mountain Road.
Last weekend, the raves did not stop, and we are so deeply grateful to have him in that kitchen.
