We feel incredibly fortunate to partner with St. Croix Farm for our live fire dinner on May 22nd. This dinner will feature short ribs from mature cattle, something rare in the United States, where most cattle raised for beef are harvested before the age of 2.
While older cattle are often overlooked in modern beef production, we believe mature beef offer deeper flavor, greater richness, and a complexity that only comes with time. Years of muscle development and a productive life create beef with a character that is hard to compare to.
Using our slow-roast live fire approach, we allow the beef the time it needs to gently break down and become incredibly tender while preserving its richness and depth of flavor.
We hope dinners like this encourage a broader appreciation for mature beef and help create more opportunities for farmers to sustainably market dairy cows and other cattle that have lived long, productive lives.
