Today, we’re grinding and forming 200 burgers 🍔 with this outstanding beef for your pleasure tomorrow. A5 BMS 12 Japanese black cow (wagyu) from Iwate, just east of Akita (one of our favorite regions of Japan).

These are the most highly prized cows in the world - some places advertise “wagyu” burgers, but the cows were American raised and the restaurant didn’t even grind or form the patty. This is the real McCoy and close to $100/pound wholesale cost. Meanwhile, the burger can be yours for $21.

May it be most memorable this Memorial Day.

We are fully reserved for tomorrow, but don’t let that discourage you - we’ve got a few extra burgers for walk-in’s. There’s 8 seats at the bar and one of the best beer and wine lists out there to enjoy it with. Come join us! Doors open at 11:30am.

When we had the opportunity to serve auction bought wild fish direct from Toyosu, Chef said, “Onagadai?  Onegai Shimasu!”  (Longtail snapper?  Yes, Please!)

Flown in fresh from Toyosu market in Tokyo for course 1 of our 10-course tasting menu - Onagadai, or deep water long tail red snapper. 
 
The fish is served as sashimi after a brief cure in kumquat scented salt with a kosho of kumquat fermented with koji and Szechuan peppercorn, and an oil of shiso leaf. 

The bones of the fish are used to make a chilled dashi seasoned with ponzu and poured tableside to accompany the delicate and nuanced layers of the dish.
