Chicken Taco Casserole w/garden salad and homemade biscuit. We mix tender bites of chicken, 2 types of beans, homemade cream sauce, diced green chilies, 2 kinds of cheese, spices (not hot) and layer it with corn tortillas. Makes me think of Mexican Lasagna. It’s very good, I promise!

Tuesday’s Vegetable Plate - We’ll have fresh peas, fresh fried okra, fresh eggplant casserole, glazed carrots, vine ripened tomato slice and cornbread

Monte’s Roasted Chicken and Fresh Roasted Vegetable Quiche w/salad. We’ll have congealed, too!
