Food truck open Wednesday and Thursday this week.

Wrapping the Brisket: a look at how we wrap our brisket. The pink butcher paper is better when you want to keep your bark more intact. I prefer this.
Aluminum foil is better if you’re going to reheat the next day. It will soften up the bark too much for my taste but will produce juicy brisket because of the semi braising that will happen.
Ultimately, the best way for juicier brisket is better raw beef and long, 12 plus hours, hold times.

After a big week of catering we’re back at it this week!
Tuesday 11- sold out across at scrub and co across from Waffle House by hospital
Thursday 11- sold out in midpoint plaza across from baseball field
Wednesday we have a previous schedule catering job

No food truck this week May 1-8. Will be back at it on May 12 with usual spots.

We have 3k ppl to cater for this week to include potato bars that’s for 2,300, plates dinner for 350, and some smaller but equally important jobs. I apologize for any inconvenience.

Sunday night is typically the only time I get to cook something different for Jessica, wife, and I. We have a tradition of having a great meal before a long week. Remember, you can just do things when cooking.
