Every great brand begins with a story.

For Chef Nick Wallace, Hen & Egg has always been more than a restaurant. It is a reflection of where he comes from and the people who shaped him. Inspired by his grandmother, represented by the hen, and his own journey, represented by the egg, the brand is rooted in family, heritage, and the belief that honoring the past is what helps shape the future.

From opening our first location inside the historic Sun-n-Sand in downtown Jackson to now announcing our second home at The Gallery in Madison, this journey has been fueled by purpose, passion, and the unwavering support of our community.

Today, we’re proud to officially announce that Hen & Egg is coming to Madison in 2027.

This isn’t simply about opening another restaurant. It’s about continuing to grow a Mississippi brand that celebrates our roots, tells our story through food, and creates spaces where people can gather around unforgettable experiences.

To everyone who has supported Chef Nick Wallace and believed in the Hen & Egg vision, thank you. You are part of this story, and we’re excited to write the next chapter together.

Stay with us as we share the journey to Madison with behind-the-scenes updates, milestones, and everything that’s ahead.

Some lessons aren’t taught in a classroom. They’re learned standing beside your father.

This photo captures Chef Nick Wallace and his dad on the family farm in Edwards, Mississippi, where a love for the land, hard work, and community took root long before the restaurants, television appearances, and accolades.

Today, we honor the fathers, grandfathers, mentors, and father figures whose guidance continues to shape who we become.

Happy Father’s Day.

Some of Chef Nick Wallace’s earliest memories were made in the kitchen alongside the women who shaped his life through food, love, faith, hard work, and community. Growing up in Edwards, Mississippi, he watched his grandmother turn simple ingredients into moments that brought people together around the table. Those lessons became the foundation of everything he creates today.

This photo, captured during a Southern Living feature with his mother, tells that story perfectly. Flour covered his hands, buttermilk ran down his shirt, and while Chef Nick tried to clean himself up for the camera, his mother paid no attention to the mess. As he shared during a recent talk:

“My mom didn’t care if I had flour on my hands or buttermilk running down my shirt. She truly loves her son.”

That kind of love is rooted deep. It lives in the meals we prepare, the stories we tell, and the way we serve our community every single day. It is the same spirit that inspired Rooted, Chef Nick’s journey, his food, and the legacy behind Nick Wallace Culinary.

Today, we honor the mothers, grandmothers, and mother figures whose love, sacrifice, wisdom, and strength continue to shape generations.

Happy Mother’s Day from the Nick Wallace Culinary family. ❤️

Chef Nick Wallace was recognized with the Community Impact Award at the Stewpot Volunteer Appreciation Breakfast, and it couldn’t be more deserved.

From the kitchen to the community, the impact goes far beyond the plate. It’s about people, purpose, and showing up consistently.

Grateful to witness it.
