Okay I shouldn’t say the ONLY reason we bought it was for my bakery🤭 We absolutely love this home and this was such a sweet bonus - we couldn’t wait any longer to get it rolling!🤪🤎🍪

Cold butter… is it scary or genius? Here are some common questions and mistakes I see for chunky cookies!

Don’t throw a whole stick of cold butter in your mixer🤯CUBE UP THAT BUTTER!! This will make it so your mixer doesn’t have to work so hard and creates opportunity for the sugars to mix with the butter.

We don’t need to cream the butter and sugars! Mix it up for about 90 seconds. It will look like wet sand, but trust me, it will blend so well with the dry ingredients!

You want consistent and uniform cookies? Weigh your dough! Scoops can be great, too, but they do tend to have more variance than a scale.

Happy baking!

We bake all our cookie dough from frozen, so adding toffee bits to our dough was no different! Why it works?
🍪 Chilling or freezing lowers the initial temperature of the entire cookie. This widens the “window” between when the cookie starts to spread and when the toffee reaches its melting point. As a result, the cookie structure solidifies enough to hold the toffee bits suspended in their distinct, chewy shapes rather than letting them melt into sugary syrup

Toffee Recipe:
1 stick unsalted butter
1 cup brown sugar (I use cane brown sugar)
1 tsp fine salt
1. Prepare a baking sheet (not glass! It could shatter) lined with parchment paper.
2. Combine butter, brown sugar and salt in a small sauce pan over medium heat. Heat until 300° F (about 10 min on my induction stove) stirring continuously (it can go from done to burnt in SECONDS!). Consistency will be similar to peanut butter.
3. Pour mixture onto parchment lined baking sheet and spread evenly with a wooden spoon or silicone spatula. 4. Allow to cool for 15-20 min.
5. Break into pieces.
Happy baking!🤎🍪
