✨ Jose Uribe Lasso Pink Bourbon - Thermal Shock

THIS is the coffee our whole team keeps reaching for right now.

It’s expressive, sweet, and well rounded. Think POG juice, mango, and lychee right from the first sip.

El Diviso, founded by Jose Uribe Lasso in Huila, Colombia, is one of those names that carries weight for a reason. What started as a 1.5 hectare farm has grown over 29 years into a 17-hectare operation now led alongside his sons who have been producing some of the more experimental coffees we’ve tasted in the past few years.

This lot is 100% Pink Bourbon, a variety known for its intense aromatics and flavor and is processed with a lot of intention.

Open-air fermentation → 48hr anaerobic dry fermentation → mosto and water fermentation → thermal shock → carefully dried.
The attention to details in the processing is on display in the final cup as clarity, structure, and layered sweetness.

We didn’t plan this launch well, but it’s already moving fast and likely gone in the next couple weeks.

Tomorrow we’re releasing a very limited St. Paddy’s Day drink and it’s just *a little* unhinged.

We steep oat milk in marshmallowy cereal until it becomes full-blown cereal milk magic. Then we combine it with vibrant matcha, float cold foam, and crown the drink with edible marshmallow treasure.

ANNIVERSARY RELEASE ✨
Rwanda Rambagirakawa — Washed + Natural

For our anniversary month, we’re delighted to share two expressions of the same beautiful coffee from the Rambagirakawa women’s producer group in Rwanda.
Both coffees come from the Musasa Washing Station in Rwanda’s Gakenke District (North Province), grown at 1600–1800 masl and composed of Bourbon variety.

Same area, same harvest, same variety with two different processes that highlight how processing shapes the cup.

WASHED
Some of you may remember this coffee from last year. This year’s expression is showing vibrant fig and raspberry notes with a smooth green tea character that ties everything together. In the cup we find fig up front, raspberry lingering long in the finish, and green tea settling through the middle. The result is juicy, smooth, and beautifully clean with purple-fruit sweetness.

NATURAL
The natural process reveals a deeper, rounder profile layered with blood orange acidity, raw honey sweetness, black tea notes, and delicate florality. Compared to the washed lot, this version is more syrupy and enveloping, wrapping the palate with complex sweetness and depth.

We’re grateful to celebrate the work of the Rambagirakawa women’s group with these coffees during our anniversary month. 🖤

Nine years of Relevant ☕ 🎈

On March 11, 2017 we opened the doors to a tiny 425 sq. ft. tasting room in Uptown. No investors. Every fixture hand-built. A lot of long days, a lot of belief in ourselves and our neighborhood, and a hope that our community would make space for our small hospitality company.

You did more than that, you made this space home. What started as a ‘hole-in-the-wall’ with room for a just a handful of guests turned into the café and roastery we get to share with you today. The friendships, conversations, regulars, and sense of belonging that grew here have always meant the world to us. We’re endlessly grateful for this community that keeps showing up, year after year.

Tonight we hosted a Seasonal Drink Competition featuring our new oat milk partner, and WOW 💥

As we officially make the switch to Minor Figures oat milk later this week, we wanted to put it to the test the best way we know how:

Every drink had to be balanced, executable, and worthy of a spot on the menu.

We tasted. We provided feedback. We scored. In the end, we crowned Tessa the winner and her seasonal drink will debut on our Spring seasonal menu later in March.

We’re making the move to Minor Figures for its cleaner profile and silky texture that lets our coffee truly shine. Less mouth coating thickness, more coffee/drink flavor. Exactly how we like it.

We heard you loud and clear:
You came back for seconds.

We all felt the love, so we’re giving this menu a few final days before the buzzer sounds for real.

Here’s the lineup until we run out:

🍒 Hollander — ginger ale, house jamaica syrup, cherry cold foam, hibiscus dust.

🥃 Lily + Jane — White Russian–inspired cold brew with Canadian maple, house cold foam, black walnut bitters, smoked maple flake salt.

🍁 The Cottage — Canadian maple, espresso, steamed milk, cinnamon graham dust.

HEATED RIVALRY seasonal menu is heading into the third period and ends this Sunday. 🏒

This is your final weekend to step onto the ice with Hollander: our ginger ale dirty soda featuring Canada Dry, house-made jamaica syrup, cold foam, and hibiscus dust. Crisp and tart, wrapped in a soft sweetness.

Some may call this drink simple… but it’s anything but boring.

Introducing: Bogalech Dukkale ✨

2000–2200 MASL | Natural Process

Single-producer lots from Ethiopia are still relatively rare, but thanks to evolving export structures and the long-standing vision of partners Sookoo Coffee and Osito Coffee, coffees like this are becoming possible.

This lot comes from Bogalech Dukkale, a 48-year-old mother of six and third-generation coffee farmer in Guji. She and her husband steward four hectares of land that Bogalech inherited from her parents. In past years, coffees from producers like Bogalech would be blended into beautiful community lots. To experience her harvest on its own is something uniquely beautiful.

This is the highest elevation coffee we’re currently offering, grown between 2000–2200 meters above sea level and that altitude truly sings in the cup.

Though naturally processed, this coffee presents with remarkable clarity, reminiscent of a washed Ethiopian. We’ve experienced beautiful jasmine florality alongside a complex cup structure: bright citrus acidity layered with smooth pineapple and melon-like sweetness. The cup feels almost tea-like in its delicacy, finishing with long-lingering, clear florals.

A complex and expressive coffee that our team is excited to share.
