It’s expressive, sweet, and well rounded. Think POG juice, mango, and lychee right from the first sip.
El Diviso, founded by Jose Uribe Lasso in Huila, Colombia, is one of those names that carries weight for a reason. What started as a 1.5 hectare farm has grown over 29 years into a 17-hectare operation now led alongside his sons who have been producing some of the more experimental coffees we’ve tasted in the past few years.
This lot is 100% Pink Bourbon, a variety known for its intense aromatics and flavor and is processed with a lot of intention.
Open-air fermentation → 48hr anaerobic dry fermentation → mosto and water fermentation → thermal shock → carefully dried.
The attention to details in the processing is on display in the final cup as clarity, structure, and layered sweetness.
We didn’t plan this launch well, but it’s already moving fast and likely gone in the next couple weeks.
