I recently visited the in Medford to pick up my weekly flower bouquet subscription from Deerfield Rustics. Naturally I walked out with an armful of goodies, including a peaches & cream dessert...
..With peaches coming into season, I started writing down weekly feature recipe ideas, but everything seemed so mundane + predictable...
..I took one bite of the peach dessert, and it was one of the best desserts I'd ever had. But what completely stole the show was the homemade whipped cream⚰️ I stopped everything happening in the kitchen, handed everyone a spoon, and insisted they try it. "I don't care if you don't like peaches," I said. "You have to taste the whipped cream." It was, without question, the best homemade whipped cream we'd all ever had...

And I knew immediately that this was the ingredient that I was looking for to complete the peaches & prosciutto weekly feature I was dreaming up!

Unfortunately, my homemade whipped cream doesn't come close to the bakeries, but it is perfect for the peaches & cream & prosciutto pizza👌🏼

Fortunately, you all can swing into the Bakehouse on your way to the farm to check out ALL of her goodies💖

🍕 olive oil base, light mozzarella, prosciutto + fresh peaches. After the cook and with a little bit of char we add dollops our homemade whipped cream, sprinkle of sea salt & a drizzle of our white peach balsamic vinegar 🍾 *it's a messy pizza as the whipped cream melts quickly

However, we will be there with the Schwans truck, handing out the frozen pizza orders, from 4-6:30p.
*we do have extra frozen pizzas if you did not pre-order.

Pizza Pop Up will be back Aug 20th!

The week of the Fourth of July, Bill and I had no plans. We weren't open, we weren't following our usual tradition of heading north with our boat in tow—we simply, for once, had no plans.

And honestly, it felt wonderful.

However, we still wanted to take advantage of this weekend off and the possibilities felt infinite.

So, we decided to use our Friday night to finally visit another pizza farm, the Stone Barn Pizza Farm.

THE DRIVE__________________
I'm going to start by telling you that the drive to Stone Barn is part of the experience. The Great River Road is my second favorite road. It winds between Lake Pepin and the beautiful rolling bluffs.

THE FARM__________________
Set within the ruins of what was once a bank barn, the dining area is surrounded by the remaining stone walls that once supported both the barn and a family's livelihood.

Dining in that space feels both intimate and expansive, offering a sense of permanence that simply can't be recreated.

A musician was playing and, almost immediately, began singing one of my favorite songs, Unknown Legend. In that moment, looking out across the rolling uplands and karst hills, I felt like there was nowhere else in the world I needed to be.

THE PIE____________________
Then the pizza arrived.
It was delicious. We were not disappointed.

We ordered four. Because that's what we do!
The Supreme, the Thai, a pepperoni + the Bianca.

My favorite was the Bianca. The combination of Parmesan, mozzarella, and feta atop an olive oil base with fresh herbs simply melted in my mouth. Yum!

The Thai was perfectly rich, savory and balanced. The peanut sauce takes the place of a traditional tomato sauce, creating a bold foundation that's both creamy and nutty. Fresh vegetables add a crisp bite, while the melted cheese softens the spice and brings everything together.

Pepperoni pizza is always my go-to order because it lets me experience the fundamentals of a pizza. With just a few simple ingredients, you can truly taste the quality of the crust, the character of the sauce, and the flavor of the cheese. A great pepperoni pizza doesn't hide behind toppings, it showcases the passion of the people who made it.

THE EVENING ____________________
Eventually, we meandered around the rest of the farm, browsing the gift shop, visiting the goats, admiring the hollyhocks, touring the kitchen with the owners, Marcy and Matt and finally ending the evening in the ice cream line!

THE TAKEAWAY___________________
I have to say, the evening was everything I hoped it would be and more. It reminded me that while every pizza farm has its own personality, what we all share is something much bigger than that✨

Gates are built for practical reasons. They create boundaries, provide protection, offer privacy and mark where one space ends and another begins.

But practical doesn't have to mean ordinary.
We wanted a gate that was as beautiful
as it was functional.

We wanted a gate that reflected the architectural style we've come to love together. Long before the pizza farm, when Bill and I were first dating, we found ourselves drawn to the clean lines, natural materials, and timeless beauty of Prairie-style architecture. Which is now our shared design language.

We wanted something that would catch your eye, draw you closer & invite you in.

We wanted something that once you walked through, you'd never want to leave.

Because beyond this gate is what has become the heart of the pizza farm, our garden.

The people voted, and we're so excited to share that we've been awarded Silver in the Southern Minnesota Best Pizza category!

For years, I've faithfully voted, asked all of you to vote, shared reminders, created posts and stories, and hoped that this would be the year we'd see our name in one of the categories we were nominated for. But year after year, it just wasn't our time.

And this year, it was different. I was different.
I was simply too tired to campaign for it. I felt there was no point. I knew I didn't want to be disappointed again. So I didn't remind anyone. I didn't create posts. I didn't ask. I quietly let it go.

Then an email arrived from the Star Tribune.

Silver. Best Pizza in Southern Minnesota.

I just sat there for a moment.
And then it hit me, this award wasn't earned because I asked for your vote, it was earned because you believed we deserved it.

You voted for this little out in the middle of nowhere place because you truly love our pizza. You voted because Pleasant Grove means something to you.✨

As a business owner, there are moments when you wonder if the long days, the hard seasons, and the countless unseen hours are making a difference.
& this, without hesitation, reminded me that they are.
Not because of a trophy or a title, but because of the community standing behind us.

Thank you for seeing us.
Thank you for believing in us.
Thank you for choosing us—even when we weren't asking.

This silver award feels like gold because it came straight from all of you 🩶

I asked our neighbor and friend, "If you could create a weekly feature pizza, what would you make?"
Without a moment's hesitation, his answer was simple, Chicken Teriyaki.

A couple of days later he showed up with homemade chicken teriyaki for Bill and I to try. Immediately after the first bite I knew it needed to be a weekly feature!

He explained in Japan a traditional chicken teriyaki pizza is topped with sweet corn & seaweed. So we headed to Seoul Foods to gather the ingredients we needed to make this feature happen!

The base is a combination of Kewpie and homemade teriyaki sauce. The chicken is brined for 24 hours, then cooked in a fry pan with a light amount of Kewpie until lightly fried then finished in a bath of teriyaki sauce. The sweet corn is boiled then smothered with butter. We add a light amount of mozzarella cheese before cooking the pizza in the wood fired brick oven. Once perfectly charred we pull it and add a sprinkle of both green onion & seaweed 👌🏼

As much as I enjoy seaweed, I was a little skeptical about it on the pizza, but after the first bite I knew why it belonged. The umami of the seaweed pairs perfectly as it balances the creamy Kewpie and sweetness of the corn, creating the infinity flavors we all love & keep us excited for the next bite, until it's all gone!
