John Dory 🐟 Saint-Pierre

According to Christian folklore, Saint Peter once caught a John Dory, leaving the imprint of his thumb on its side, the distinctive dark spot that the fish still bears today. Hence its French name, Saint-Pierre.

At Lutèce, we skewer the whole fillet and grill it over an open flame, allowing the flesh to take on a delicate smokiness while preserving its natural sweetness. Sliced to order, it is served alongside charred cabbage and a light, foamed pepper beurre blanc.
