Have you had our winter Tyrolean specialties called Schlutzkrapfen!? Doesn’t sound very Italian, we know 🤪

These half-moon ravioli are made with organic rye flour and feature a filling of housemade fresh cheese, organic spinach and just a hint of nutmeg. In Tyrolean, “schlutz(en)” means “to slip” or “to slide.” It refers to the way the filling can gently ooze inside the dough if overfilled. But when made paper thin, tossed in brown butter and finished with 24-month Parmigiano Reggiano, they become less rustic and more tender, delicate, and deeply comforting mountain food.

Thank you for continuing to have us listed as one of the 18 Best Pasta Places in DC & our recent Dining Report Feature! We are so proud to bring these authentic dishes from the Dolomites to Washington, D.C. 🧡

Ama means LOVE.

It is also the heart of the poem on the big orange door when you walk into Ama: ama e fa ciò che vuoi. It serves as a reminder that when love is the root, only goodness can grow.

When actions rise from love, they naturally become care. Care for ourselves. Care for one another. Care for the land. Care for the future.

was an invitation to return to balance through Food as Medicine. is an invitation to return to connection through Food as Love.

Restaurants have always been more than places to eat. They are gathering spaces. Living rooms. Meeting grounds. Places where stories are shared, relationships are formed, and strangers become community. Long before wellness became a category, people understood that health was shaped not only by what we consume, but by how we live, how we relate, and whether we feel held, seen, and nourished.

This menu is guided by , New York Times bestselling author of Eat to Beat Disease and Eat to Beat Your Diet, alongside training in Integrative Nutrition and background in herbalism and functional beverage design. Together, we look at the growing body of science around how specific foods support circulation, nervous system regulation, and gut-brain communication, and what that means for how we experience warmth, comfort, and connection.

Because love is not abstract. It is physiological. It moves blood. It softens tissue. It calms the nervous system. It expands our capacity to receive and to give.

We are living in a moment where fear is loud. Where separation is easy. Where the temptation to harden is constant. This menu is an invitation to soften. To gather. To choose warmth over withdrawal. To return to love through the simple act of sharing a meal.

At Ama, food can be medicine,
and gathering in community
is part of the healing.

For we are highlighting some of our amazing partners that we are proud to source ingredients from!

Our Pesce features Seatopia Branzino with Braised Escarole, Piemontese Riso Nero & a Leek Salsa Verde.

When sourced correctly, Branzino provides omega-3 fatty acids that support heart and brain health, while black rice offers fiber and essential minerals, including iron, zinc, calcium, selenium, and manganese that support nutrient absorption. Escarole and leeks contribute fiber and phytonutrients that support gut health and circulation.

Most branzino is dangerously overfished or farmed often in high-density ponds. What’s special about Seatopia is:

1️⃣ The Branzino is sourced from Nutrient-Rich Estuaries near Cádiz, Spain using Regenerative Aquaculture Practices that have actually increased biodiversity transforming the area into a thriving, vast ecosystem.

2️⃣ The incoming Atlantic saltwater is naturally filtered as it flows through the extensive marshlands and the water released back into the sea is cleaner than when it entered!

3️⃣ Seatopia is the only seafood company in the world that lab-tests every harvest to ensure your seafood is omega-rich, mercury-safe, and free from detectable microplastics (including after packaging), all while working to restore the health of our oceans.

We hope you come to try this special Branzino for yourself at Ama and the best news is that if you enjoy it, you can order an array of Seatopia seafood directly to your home. Visit www.seatopia.com.

At Ama, Sardinian Grisu Ibrido peppers are grown for us by our friends at and preserved sott’olio for winter and appear in our Sardine Crostini & Verdure Verde.
