Nigerian Sardine Bread
Ingredients
Dough
• 3 cups all-purpose flour
• 2¼ tsp instant yeast
• 2 tbsp sugar
• 1 tsp salt
• 1 cup warm milk or water
• 3 tbsp butter or margarine
• 1 egg
Sardine Filling
• 2 tins sardines
• 1 small onion, finely chopped
• 1 Scotch bonnet pepper, finely chopped (optional)
• ½ tsp curry powder
• ½ tsp thyme
For Brushing
• 1 egg, beaten
Method
1. Mix flour, yeast, sugar, and salt.
2. Add warm milk, butter, and egg. Knead until smooth and elastic.
3. Cover and let rise for 1 hour or until doubled.
4. Mix sardines, onion, pepper, curry powder, and thyme in a bowl.
5. Roll out the dough and cut into portions.
6. Place a spoonful of sardine filling on each piece and seal into buns or rolls.
7. Arrange on a greased baking tray and let rise for 20–30 minutes.
8. Brush with egg wash.
9. Bake at 180°C (350°F) for 20–25 minutes until golden brown.
