BARTLETT PEAR /sorbet/

it has been a couple of years since we have spun up this beautiful fall classic flavor, reeking of the pennsylvania soil, creamy, gritty, toothy, buttery, slightly sweet, just enough acidity to keep it from being earthy. such a simple & pure flavor. as if you’re biting into the fruit itself.

we received our last crates this sunday from our friends Toigo Orchards and so she will probably be around for another week, or so. you should at least ask for a sample in our shops just to see what we’re fussing about.

crookneck pumpkins grown by omar beiler’s son, jr., who grows around 2,000 LBS for us up in lancaster, pa. we get 100 - 200 LB lots delivered every week throughout the fall.

we split them and roast them hard, caramelizing the f@*k out of the sugars and combining just the right level of spice .. fresh ginger, cinnamon, nutmeg, allspice, muscovado sugar .. always dialing into that perfect level of spice .. which for us is a superior roasted pumpkin flavor & supported ever so deftly with a mix of fresh ground spices.

CROOKNECK PUMPKIN

heirloom neck pumpkins are just now being harvested by our amish dairy farmer, omar beiler of roam dairy, in lancaster, pa. his son, jr. grows over 2,000 lbs for us, which we roast hard to make our pumpkin spice gelato and our homemade pumpkin syrup for the pumpkin spice latte and pumpkin spice chai.

these are the ancestors of the butternut squash and very difficult to find, even in the local farmer circuit. i always remember my irish brother zach lester Zach Lester saying how the amish are the keepers of the heirloom seeds like no other. it’s good to run with the old world folks .. close to the land .. u can have your digital AI bu****it .. it’s very clear where that’s all going. we’ll be with our farmers out on the land .. growing & holding the good s**t. siempre ♾️

as we slowly turn towards the fall season 🍁 our summer menu starts to wane and we reach out to our farmers and check in on the fall bounty like apples, pears, ciders, crookneck pumpkins, sweet potatoes, maple syrup, amongst other things.
