Happy National Fried Chicken Day!

Did you know that Southern fried chicken has roots in both Scottish and West African cooking traditions? Scottish settlers brought the technique of frying chicken in fat, while West Africans contributed flavorful seasoning methods. Together, these influences helped create the iconic fried chicken we know and enjoy today.

We also use maizena (cornstarch) to achieve extra crispy fried chicken. It can be used either in a 50/50 mix with flour or on its own for an irresistibly crunchy crust.

A simple pro tip we follow: after frying, place the chicken on a cooling rack set over a baking sheet instead of a plate. This helps air circulate and keeps the crust crisp instead of becoming soggy.

Happy National French Fries Day!

Today we are celebrating one of the most loved comfort foods, french fries. French fries are commonly made with white potatoes, salted, and served with a dip like ketchup. We also enjoy sweet potato fries, and we prefer white potato fries when they are cut very thin like frites. We do not prefer steak fries.

We also use the cold start frying method when preparing fries. This technique uses half the oil, skips double frying, and still achieves crispy fries with deep potato flavor. It also minimizes mess and reduces oil splatter. In cold-start frying, we place a deep pot with 4 cups of canola oil and 3 Yukon Gold or sweet potatoes cut into fries over high heat. As the oil slowly heats, the potatoes cook through, then brown and crisp as the oil reaches a boil over 25 to 30 minutes. It requires less oil and little temperature monitoring. If there are concerns about fries coming out greasy using this method, that will not happen.

Happy National Macaroni Day!

Did you know that Johnny Marzetti, a classic American pasta casserole created in Ohio in the 1920s by Teresa Marzetti and named after her brother in law Johnny, found a second home in Panama?

The dish arrived in Panama in the 1940s through the U.S. military and became a favorite among Zonians and local residents. Over time, Panamanians made it their own, renaming it Johnny Mazetti (no r) and adapting the recipe by replacing ingredients like mushrooms with peas and carrots.

Today, Johnny Mazetti remains a beloved comfort food dish in Panama and a great example of how recipes evolve as they travel across cultures.

The recipe is also featured in Chef Yadira Stamp’s cookbook, Panama On A Plate.
