We’re making some serious headway now! We’re on pizza #, I don’t even know now but I think we have figured out the dough.

Today we worked on the sauce. Simple, real, and only 4 ingredients ♥️

We tried 4 versions of sauce now and we’re down to two keepers!!! 🍕 🍕 🍕

Out of 9 pizzas tonight. Pizza #8 came out the best. The highest hydration of them all at 67.5 %. Very tricky to work with especially for an amateur like myself.

What we learned tonight…..

-the sauce is perfect
-the cheese is perfect
-the dough, we’re getting there

Cook times averaged between 2 mins on the Neapolitan and 5 mins on the larger NY style crust.

Back to the drawing board! We will do this all again tomorrow 🤘

🍕 Good Morning Friends 🤩 We have been working late and early playing with dough!

Today is R&D. 8 different sizes, multiple hydrations, a few different ingredients. All will have a different structure, rise, fermentation and appearance 🤘
