For those of who have asked YES! Pickled mustard seeds are a thing… they are brined, then blanched 7 or 8 times to remove bitterness, then simmered in a white wine vinegar and brown sugar pickling solution. They take a lot of love but wow… sooooo delicious!

Hey everyone.. repairs are done but I won’t get my required water test done in time so opening day will be Sunday June 7. Details to come. In the meantime I’m working on bringing another new dish to the food trailer this season….Smoked Gouda Chicken Cordon Bleu with Dijon cream, Parmesan, parsley oil, and pickled mustard seeds! Really looking forward to seeing everyone! Hope you’re all hungry.

Less than 2 weeks until my opening and it’s beef stock time! Actually it’s espagnole which is one of the french mother sauces and has significantly more depth of flavor than just beef stock. 18 pounds of beef bones I trimmed and roasted along with about 10 lbs of vegetables, deglazed the roasting pans, and into my 10 gallon stockpot with about a dozen other ingredients. Should be ready for straining tomorrow sometime. See you all soon!!!!

My season is slowly approaching so I’m working hard on new ideas. Strawberry lemon baked Alaska in individual portions… definitely a tough dessert to do from a food truck without compromising the integrity of the dish but I love a challenge.
