Happy Fourth of July Eve Vallians!! It`s going to be another HOT one today and tomorrow; when I opened the door this morning, I was greeted by our dear friend Humidity and old girl just slapped me in my face and again I say, " Why lord Why"?!?! Y`all, have fun, be careful, and stay hydrated.
We are almost through this first major heatwave of the summer. Next week's conditions are looking more suitable for all living things. Praise be!! This week has been rough on the old-lady, I aint gonna lie. I have been cooking for a lifetime, at this point, but it definitely does not get easier; you just know what to expect and how to deal with the heat. I get asked a lot, why at 55 years old am I still cooking in my kitchen? And while I will say, it is unusual in my line of work to still be actively cooking on my line and my kitchen, there are still a few of us left. The answers are easy for me: first and foremost, I do it because cooking is what I love to do; it is my passion and the one thing in life that I have been really good at, that alone keeps me putting the coat on every day. I also do it because I believe that I can deliver the highest quality product for y`all with me standing behind the stove. Sweet Mamas is a labor of love for me; I show up and I do the work because it's my kitchen and I lead my crew by doing the work with them. Everything that rolls out of this kitchen, ultimately carries my name and a standard of what it should be when it gets to the table. I am so proud of the food we put out in the restaurant. It`s not hard to keep going and doing the work when I see the rewards every day. I am also fortunate enough to have a FANTASTIC team; my crew has my back, shows up and they do the hard work daily with me and I am eternally grateful; nothing happens without the Sweet Mamas crew. As y`all know Courtney has been working with me in the kitchen; it`s been a long time since I have had a young cook working beside me who wats to learn, is interested in food and understands why we hold ourselves accountable and to a high standard, daily. She is doing a great job, and I am having fun teaching her techniques, GO COURTNEY!! Maybe one day the old lady will get to step off the line, but for now, we cook!
The Friday Plate Lunch will be Sweet Mamas Southern Funk Ribs, dry-rubbed and cooked low and slow until falling off the bone tender. Sauced with our from scratch Memphis-Style Sugar Cane Cola BBQ Sauce. We serve them sloppy y`all, lots of sauce! The sides will be FRESH Collard Greens, Broccoli Pasta Salad, Southern-Style Green Beans, Butter Beans, Black-Eyed Peas, Sweet Mamas Mustard Potato Salad and Country fried Skillet Cabbage. All of sweet Mamas Plate lunches are served with our Southern Buttermilk cornbread muffin and house-whipped Honey butter. Nothing sets this plate off like an ice filled glass of our Grape country Kool-Aid or our side-porch lemonade: Pineapple cucumber.
