Meet Mr. Sweets. Originally known for Big Nic's ice cream. I was a young man, did I mention a handsome one 😉, that started a business young as a drive towards becoming a self-made entrepreneur. Choosing the sweet side of life, I found something that was a staple for most bellies. Sweets.
Throughout my childhood sweets mostly came up during Thanksgiving with pies, Christmas with cookies, & cookouts for classic summer favorites. As I progressed throughout childhood & into teenage years, I've found a few select recipes that I worked to perfect. As I matured into high school I brought that passion of culinary with me. As I approached my freshman year, I immediately took on my first foods classes. Within 4 years, I completed a majority of foods classes & started to feel out my path.
As I neared senior year of school, I focused on what I wanted to do most, desserts. I'm not quite sure what got me hooked in the first place, but I know it was something that brought me back to every Christmas with my mom. Her & I, mostly her, used to make cookies, candies, & everything in between for the span of 2 months. Throughout just 2 months, she could've easily have gone through enough sugar to build a multifamily! From the time I spent with her, she taught me that in order to be the best, I've got to know my sweets front & back. When senior year was coming to a close, I wondered where I wanted to go post graduation. Coincidentally, at that time my foods teacher got reached out to from Northcentral Technical College(NTC) for an internship as a set of extra hands for the culinary students. As I heard of this opportunity, I jumped at it.
When I started the internship, I didn't realize where my skills compared to in the world of culinary. I realized rather quickly that I've got a lot to learn. I found that having a general base of knowledge is crucial to building the stepping stones for future areas of understanding. As I progressed through the internship I realized that if I seek to pursue sweets as the main job, I'd like to know how to cook well too while I'm at it. With that epiphany, I started culinary school....
