Happy Friday, Wayne America! ☀️

Wow…you all showed up early today! 😍 Holy moly!

Our bakery case is officially SOLD OUT, so we’ll be closing today at 11:00 a.m. to give our amazing team a much-needed break before this Nebraska heat turns the bakery into an oven. Thank you for another incredible day, we truly couldn’t do this without you!

Tomorrow is Brisket Saturday, and we can’t wait! We’ll also have gluten-friendly blueberry muffins and gluten-friendly banana muffins, and we’re excited to offer a delicious option for those with gluten sensitivities.

Good morning, Wayne America! ☀️ Happy Thursday!

The case is fully stocked with all the goodies, and our produce truck just rolled in with fresh strawberries and blueberries for our açaí bowls! 🍓🫐

We also have frozen latte pops! They are caffeine yumminess in popsicle form!!

We’ve got hot breakfast, handcrafted lattes, loaded teas, and plenty of delicious treats waiting for you. It’s going to be a great day, and we can’t wait to see your smiling faces!

And don’t forget!!! Tomorrow is Fancy Friday! Come enjoy French toast or pancakes, and be sure to grab a Crème Brûlée Donut while you’re here. 🤤

It’s a little hot and humid out there, but hey, that’s Nebraska for you! Stop in, cool off with a refreshing drink, and enjoy a delicious breakfast or lunch with us.

It’s Panini Wednesday and Double Punch Day! 🎉 That means you’ll earn double punches on all of our handcrafted lattes and loaded teas.

🥪 Brunch is served from 11:00 a.m. to 1:00 p.m.
Today’s feature is a Philly Cheesesteak Panini on our homemade sourdough, baked fresh this morning, served with our homemade French-fried taters. If you don’t have lunch plans, we’ve got you covered!

We’re so grateful for the chance to recharge over the last few days, and we’re excited to be back doing what we love, serving all of you.

Story time!

What made you want to become a baker? We get asked this a lot. We lost a lot of weight- eating clean. And people deserve clean options.

Well- I, Jaclyn…found out I have an egg allergy and gluten.

So what do we do…my amazing husband made some egg free and gluten free Banana muffins.

Then today…blueberry.

Who needs a gluten friendly option? Because these are SO good.

PS- We’ve been talking about it for so long…but gluten friendly sourdough, it’s happening soon. Stay tuned.

PSS- why just “gluten friendly”? Our bakery is full of flour. And we don’t want to risk cross contamination with those having serious allergies vs. preferences.

💛 Wow, Wayne America, what an incredible week!

Chicken Days #3 is officially in the books for His Baking Co., and our hearts are so full. Thank you for supporting our bakery, our coffee trailer, and our little dream. We are beyond grateful to call Wayne home and to be surrounded by such an amazing community.

After an exciting (and very busy!) week, we’re going to give our team a well-deserved chance to rest and recharge. The bakery will be closed Sunday, Monday, and Tuesday, and we’ll be back bright and early Wednesday at 5:30 a.m.

But before we take a little break, you’ll still be able to find us tonight at Faith & Family Night at the Dixon County Fair! 🎶 We’ll have the coffee trailer serving up lattes, loaded teas, açaí bowls, and donut kebabs while we enjoy an evening of incredible music and community. We hope to see you there!

If you know someone who stops in every morning but doesn’t have a smartphone, we’d sure appreciate you helping us spread the word. ❤️

Thank you again for making Chicken Days so special. We’re going to recharge, thank God for His many blessings, and get ready for the next adventure.
