If you've ever wondered where Nacho Bravo came from, here's the real story.
It started in Madrid, Spain, in 2018. A small cantina on Paseo de las Delicias, right by the old Matadero district. The founder had spent years traveling the world, picking up flavors, techniques, and an obsession with doing things differently.
The result was a taquería unlike anything Madrid had seen Mexican at the core, but with a passport full of influences. Octopus and chorizo tacos. Pork belly slow-cooked in whisky barbecue. Tuna tataki on a tortilla. Fusion that made sense.
Seven years later, that same kitchen ended up in the Top 15 best tacos in Spain out of hundreds of restaurants, in a blind tasting judged by food professionals. Top 3 in Madrid 🥉
And then it crossed the Atlantic. Because Weatherford, Texas deserved something it didn't have yet: a taquería with a real story behind it. Not a chain. Not a franchise. A place built by someone who genuinely can't stop thinking about what the next great taco looks like.
