ort. Just like a lot of people when you smell Kingsford charcoal burning it can always take you back to that backyard on a summer afternoon. So that is where it really began for me was with my Dad and PaPa in a backyard always cooking over live fire. My grandparents bought the Pioneer Camp BBQ located next door when I was five years old. So the BBQ life raised me. I remember learning who to stoke fires and run a pit at a very young age with Papa on an old brick style pit. At the same time my Dad was a full time butcher. The only job he ever had. On Friday nights a lot of kids went out to the movies or football games, but my Dad and I hit the grocery stores. We would spend time looking at the meat counters and hopping around to different grocery stores while Dad told me stories of cutting meat. That’s why I always like to tell people I’m a 3rd generation BBQ’r and a 2nd generation butcher. I was standing on a milk crate at 6 years old tossing frozen Bull meat into an open top Hobart meat grinder. I was introduced into both worlds at a very young age. Fast forward to my teenage years at this point My Dad and I were running our own full custom butcher shop where we still did on the farm killing a small town 2 man butchering operation (David’s Processing). At this point in my life I like to tell people if it sh%*t$ through fur and walks on four legs I can break it down with a 6” boning knife. My grandfather had passed at this point while my grandma still was running the Pioneer Camp BBQ my Dad had turned his attention to competition BBQ. After winning some BBQ categories Dad was hooked and started competing full time. So myself my Dad and Uncle started bouncing around the country cooking BBQ. After about 10 years, 80 Grand Championships, and some world titles won while smoking along side Dad and soaking up every bit of knowledge I decided to go back to my roots and open a restaurant. In summer of 2014 I had an epiphany sitting in Hochatown Oklahoma. I started drawing up an idea of a BBQ Stand on the back of a menu. The fun feeling of atmosphere and great food I was enjoying at that time I wanted to bottle it up and share it with everyone. So soon as I got home I got started. My grandma let me get a piece of property from her to build what was my dream of building the BBQ stand right next door to the BBQ place that really started it all for me. The Pioneer unfortunately had caught fire in 2007 and was not salvageable. So while cutting a beef up standing next to my Dad one day I tell him, “I want to open a weekend BBQ stand up.” Without a hesitation he looked at me and said, “ if there is anyone that can do it. It’s you.” So there it began. It took about 8 months of hard work and a lot of help from friends and family. Finally on May 16, 2015 I opened The Butcher BBQ Stand, and people actually showed up. Later that year my Dad took his retirement and hung up his knives after 30+ years of butchering. I decided to never look back and just focus on creating that feeling I had sitting on that deck in summer of 2014. To share that happiness with others through The BBQ Stand and our food.
