“It’s been over two days and I am still digesting Konro.
Not the food. The experience.
I don’t think people fully comprehend what Jake Bickelhaupt is doing. I’m not sure I do either. Having dined at hundreds of Michelin restaurants around the world, including places like Plenitude in Paris, Core in London, and Smyth and Alinea in Chicago -Konro belongs in the same conversation. Should you go to any of those world-renowned restaurants, you will find a team of 20+ people working 19 hour days, 7 days a week to reach and maintain that level of excellence. At Konro, it’s Jake and Naida. That’s it.
It would be the equivalent of Lebron James playing every team in the NBA solo —1 versus 5-and still making it to the championship. No matter the talent and work ethic, that’s impossible. Yet Jake is doing exactly that. Achieving the impossible. Day in and day out, every week, he is taking on the work of a 20 person team and executing with perfection at the highest level. The result is one of the best restaurants in the country. It is 3 stars by any measure, and it is only a matter of time before he takes home his trophy.
I can only think of a handful of restaurants where every single dish was outstanding. At some point tastes diverge between diners. On Saturday, however, I devoured everything, and I left in goldilocks fashion-not too full, nor left wanting.
Perhaps more than anything, Jake has mastered layering textures and flavors symbiotically. Each dish was unique from its neighbors on either side, but it didn’t feel like you were bouncing from one serving to the next.”
