August reservations are now open.

There is something unmistakable about this time of year. The air grows warmer, the afternoons linger a little longer, and the season offers its sweetest gifts. Summer fruits arrive at their finest ripe, fragrant, and full of character guiding the flavors that will grace our counter in the weeks ahead.

Before the season begins in earnest, our team will be taking a brief pause from August 2nd through August 11th. A little time to rest, gather inspiration, and return with renewed energy.

We look forward to welcoming you back on August 12th, ready to celebrate another month of thoughtful cooking, generous hospitality, and the beauty of the season.

Every morning the sea decides, not us. Whatever the fishermen bring, that's the fish. No fixed species, no script, just trust in what the water gives.
Underneath it, fufu of Nam Wah banana, mashed by hand the way it's always been done, a technique carried over from Africa that never left Cuba. The pil pil is gentler, oil and the fish's own collagen brought together slowly until they hold, a technique carried over from Spain that became ours too. And the curry leaf, crisped on top, isn't Cuban at all. It just grows here in Florida, and somehow it ties the other two together.
This is what Cuban cuisine has always been about, roots carried over until they became one plate.

has been part of Emelina's foundation from the very beginning. Born in Atlanta and shaped by his Puerto Rican and Chilean heritage, he brings incredible talent, determination, and a passion for growth that shows in everything he does. Before joining Emelina, he served as Sous Chef at Red Rooster alongside Chef Tristen Epps.

His unwavering support, quiet leadership, and relentless work ethic have helped shape who we are today. Watching his dedication continue to bear fruit has been one of the greatest rewards of this journey.

One of the things we love most about cooking with the seasons is learning how to say goodbye.

This salad was a tribute to spring: tender Florida little gems, sweet strawberries, crisp snap peas, Florida hazelnuts, and a bright strawberries-aji amarillo emulsion.

Today, it leaves the menu.

Not because it's any less beautiful, but because nature has turned the page.

Summer is here, and we're excited to follow its rhythm, one ingredient at a time.

In sub-tropical climates, fruit is more than a season, it is part of everyday life, memory, and identity. This month, our menu is deeply inspired by that abundance: the sweetness of peak-season fruit, the brightness, the acidity, the freshness, and the vibrancy that naturally define summer.

Throughout July, these flavors will shape the experience in subtle and expressive ways, reflecting the ingredients and traditions that continue to inspire our cuisine.

We’re also incredibly grateful to begin another month as a Michelin-starred restaurant and to continue sharing this journey with all of you. Thank you for being part of our table.
