It’s Westerly, so by now we know the rumors are already circulating. Rather than let Facebook comments write the story for us, here’s the truth.

Chillingham’s is temporarily pausing operations.

Over the last few months, we’ve faced a combination of staffing and operational challenges that have affected the consistency, culture, and overall experience we believe our guests deserve. And if we’re being honest, we’ve reached a point where simply “getting through service” is no longer good enough for us.

Instead of continuing to operate below our own standards, we’ve decided to take a step back and rebuild things the right way. That means restructuring the operation, rebuilding the team, restoring accountability, and refocusing on what Chillingham’s was always meant to be.

This is not a decision we made lightly. This restaurant means a great deal to us, and closing our doors — even temporarily — is incredibly difficult.

At the end of the day, the truth is we’re not going to pretend everything’s fine when it isn’t.

Chillingham’s was named after a breed of cattle known for being stubborn, resilient, and territorial. So no — we are not going anywhere.

This is a pause, not an ending.

We’ll be back, hopefully a little wiser, slightly more rested, and ready to deliver the kind of experience this restaurant was always intended to provide.

To everyone who has supported us, encouraged us, been patient with us, and continued believing in what we’re building here: thank you. We truly appreciate it more than you know.
