™️ A welcome drink is the first thing a guest touches. Before the food, before the toast, before they’ve figured out what kind of night they’re in for. Most people treat it as a logistics problem, get a glass in every hand.
We treat it as the first sentence of the evening.
So we don’t hand people a glass of something familiar. This one was a single spherified bite, pea flower tea, clarified cucumber-lime, fennel, sealed inside a thin membrane that bursts the moment it hits your mouth.
The first thing that happens to a guest is surprise. They look at the person next to them. They start talking.
That’s the actual job. Not the drink. The drink is the excuse.
The job is turning a room of strangers into a room that’s already talking before anyone says a word.
