Hello friends!
This heat wave is exceptional and presents unique challenges. It is so hot that AC units struggle to maintain consistency and freezer spaces are being overloaded especially in older buildings or spaces with little insulation.
Bakers rely on carefully controlled temperatures to prepare the dough and shape the pastries we all love. But Mother Nature has other plans this week. Everything is impacted from the lamination and proofing of the dough; to the butter, chocolate, and other ingredients used. The consistency is a challenge and the quality is impacted.
Therefore, we will have a limited selection on Friday morning (7am to 12pm). We will make as much as we can but also do not want to jeopardize the quality.
Thank you for your continued support. We hope when we return in 12 days that temps have returned to a “cool” 90 degrees again.
