There’s a famous dessert in Mexico called “Carlota de limón”, which is, layers of Maria cookies and condensed milk mixed with lime on a deep dish, refrigerated and serve cold. It’s a very simple dessert but it’s amazing.
_
I wanted to recreate that, papi’s style. So we started with a lemon ice cream using fresh squeezed lime juice, with our dairy, to make a super refreshing ice cream, that’s perfect for summer.
_
Then we made a condensed milk swirl, this one has been on my list of recipes to develop for a hot minute, finally took the plunge, figured it out and it turned out great. This paired with the ice cream has already great “Carlota” vibes.
_
But of course a Carlota is not a Carlota without Maria cookies. We added a Maria cookie gravel throughout the pint. Laurie by layer, so you get the same experience as eating a Carlota.

Butterscotch ice cream with Guiness chocolate cake crumbs and a salted vanilla bean frosting.

Creamy, buttery, sweet, butterscotch ice cream, we make our own butterscotch sauce, which we then blend into our base and it makes for an amazing flavor 🤌🏼

Then we make a Guiness cake and crumble it into the pint. The Guiness elevates the chocolate flavor,
It gives it a lot more depth, which makes for a rich, chocolate forward, moist cake.
_
We’re big fan not adding salt elements into our ice cream. So we went with a salted vanilla bean frosting swirl. We used mexican vanilla bean, and add a generous dose of salt to make it a sweet and salty element that pairs really well with the other elements and contrasts the sweetness and richness of them.

Sea salt ice cream with gooey caramel swirls and saltine toffee bark pieces (aka crack).

This is the flavor that we’ve gotten the most request to bring back n the last few months.
_
Sweet and salty flavors are among our favorites, the mix of the saltiness intertwined with the sweetness makes for amazing combinations.
_
We start by adding a generous amount of sea salt to our dairy. We aimed to keep a balanced profile, so it has a saltiness to it, but it’s not overly salty. Just enough.
_
Then we make our caramel, which y’all love, and add pools of it in our pints. The combination of the salt and caramel is already 🤌🏼🤌🏼🤤

But then we add saltine toffee pieces, which also have an element of salty and sweet to them. To all my sweet and salty peeps, this is a flavor you’ll want to try.

Cocoa Puffs cereal milk ice cream with a malted fudge swirl and Reese’s puff cereal crunch.

As a kid I loved the feeling of having a bowl of chocolate cereal, finishing the cereal, being left with the “chocolate” cereal milk. I’d quickly drink it all, and not a single drop of it was wasted.
_
For this ice cream we steep Cocoa Puffs into our milk for 24+ hours, the goal is to try to get as much flavor steeped into the milk, so you get the same taste as drinking the cereal milk when you are eating it.
_
Then we made a rich malted chocolate fudge, we went light on the malt, but enough to give it old school diner vibes, and add richness to the pint.
_
Last we caramelized Reese’s puff cereal so it stays crunchy in the ice cream and you’re not stuck eating soggy cereal.

Fruity pebbles cereal milk ice cream with a white chocolate cheesecake swirl and fruity pebbles clusters.

This flavor tastes like childhood mornings, getting ready for school or starting the weekend. Getting all the energy needed to start the day with a good ol’ bowl of fruity pebbles cereal.
_
For the base we went with a light steep on the cereal milk so you get the fruity pebbles notes, the sweetness in milk, but the stronger fruity pebbles flavor comes from the fruity pebbles clusters.
_
Then we make a white chocolate cheesecake swirl, and add it throughout the pint. It brings some tangy notes to the pint and gives the pint depth in flavor.
_

Brûlée banana ice cream with a lightly cinnamon spiced dulce de leche swirl and cinnamon bun cookie dough.

Banana bases are underrated. They usually get a bad wrap because many of them are made using flavoring, which doesn’t mimic the banana taste at all.
_
But when you use just straight up ripe bananas, and even better when you brûlée them before you make them into ice cream, it makes for an amazing flavor.
_
We made a homemade dulce de leche swirl, and add small amounts of cinnamon, so you get this beautiful Carmel/toffee-esque flavor with hints of cinnamon in each bite.
_
Last we make a cinnamon bun cookie dough and add it all throughout. It’s like getting little pieces of cinnamon roll mixed throughout your pint.
_
