/absinthe sour/
lately, we've been thinking a lot about the color green.
not the cool, minty kind. Not the gentle shade of new leaves either.
but something deeper, dense, slightly bitter, and with a quiet sense of ceremony.
we started with matcha that a powder we’ve always loved for its earthy bitterness, its clean finish, and the way it lingers in the mouth. then we asked ourselves: what could bring light into this depth, without diluting its soul?
while playing with acidity, we recalled our first Absinthe Sour, not the easiest drink, but one that stayed with us. Herbal, a little mysterious, and impossible to describe in just one word. We didn’t use absinthe, but we kept its spirit: something that hints at Artemisia, something cool, green, and quietly intense.
the matcha was whisked to a gentle froth, paired with a slice of fresh yellow lemon , just enough to let the citrus whisper through the richness of the tea.

what we ended up with is a drink that moves between sour, sweet, and bitter, which is soft on the tongue, and full of light.
like a summer noon: with sun, with shade, and just enough breeze to make you forget the heat.
sometimes, maybe, that’s all summer really needs to be.
