4 Chicken Breasts, skinless & sliced into strips
1 tbsp Olive Oil
1 large Onion, thinly sliced
1 Garlic Clove, minced
1 tbsp Tomato Puree
3 tsp Smoked Paprika, heaped
2 tsp dried Thyme
1 tsp Chili Powder, mild or hot
400 g tin Tomatoes, chopped
300 ml Chicken Stock
125 g Green Olives
400 g tin of Butter Beans, drained
2 large Bell Peppers, sliced
Salt and Black Pepper, to taste

1. Warm the olive oil in a large heavy-based casserole pot or deep pan over medium heat. Add the sliced onion and sautรฉ gently for 5โ7 minutes, stirring now and then, until softened, lightly sweet and translucent.
2. Increase the heat slightly, then add the chicken strips. Cook for about 5 minutes, allowing the chicken to take on a light golden colour on the outside.
3. Add the minced garlic and stir for around 30 seconds, just until fragrant. Mix in the tomato purรฉe, smoked paprika, chili powder and thyme. Continue cooking for another minute, stirring well, so the spices can release their flavour.
4. Pour in the chopped tomatoes and chicken stock. Stir everything together, then season lightly with salt and pepper.
5. Allow the stew to come to a gentle simmer, then add the drained butter beans, sliced peppers and olives.
6. Cover with a lid, reduce the heat to low, and leave it to simmer softly for 20โ25 minutes. During this time, the chicken will become tender and the flavours will blend into a rich, comforting stew.
7. When ready, taste and adjust the seasoning if needed. For extra freshness, stir through chopped parsley or finish with a squeeze of lemon juice. Serve hot on its own or with your favourite side.
