Our chapter here began yesterday. Two intensive days breathing life into the , making it ours. Two days finalizing a menu that speaks our language, even away from our Vienna kitchen.

Since yesterday preparations have been running at full speed. Everyone is pulling together to turn months of ideas, conversations, and planning into reality.

August and September are now open.The next season is slowly taking — through new dishes and new details, all coming together to create moments that will stay long beyond the table. Every table and every date is now open to choose from.Book now — our few tables rarely remain available for long.

Copenhagen awaits. Afterwards, the restaurant grows quiet for a short while — as new ideas, details, dishes, and objects slowly take shape behind the scenes.Reservations for late August and September open June 1st at 12 p.m. sharp.

Right now, we’re working on new details again.

The chopsticks are hand-carved—each one slightly different. They come in small pouches handmade by Nora’s mother, prepared and placed for every service.

It’s a small detail, but one that reflects the depth of attention that goes into everything we do.

We are not cooking with fire in the way you might expect.

It’s about control and balance, not smoke or intensity. Sometimes the flame leads; sometimes it stays in the background. What matters is how we use it – to bring out the best in each ingredient.

A new stage, one month only. Something of ours travels north.

For the first time, Restaurant Doubek steps outside of Vienna. We arrive at Tivoli’s Pagoda from June 13th to July 11th.

The menu will be revealed soon. The window to book is open, but the seats are limited.
