Our chapter here began yesterday. Two intensive days breathing life into the , making it ours. Two days finalizing a menu that speaks our language, even away from our Vienna kitchen.

Now it’s time to deliver. Lunch or dinner, the table is set, we are ready.

Right now, we’re working on new details again.

The chopsticks are hand-carved—each one slightly different. They come in small pouches handmade by Nora’s mother, prepared and placed for every service.

It’s a small detail, but one that reflects the depth of attention that goes into everything we do.

We are not cooking with fire in the way you might expect.

It’s about control and balance, not smoke or intensity. Sometimes the flame leads; sometimes it stays in the background. What matters is how we use it – to bring out the best in each ingredient.

A new stage, one month only. Something of ours travels north.

For the first time, Restaurant Doubek steps outside of Vienna. We arrive at Tivoli’s Pagoda from June 13th to July 11th.

The menu will be revealed soon. The window to book is open, but the seats are limited.
