Ube is a purple yam. Taro is a corm - an underground plant stem. They can both appear in sweet dishes, but they are different plants.

And yes, we’ve mixed them up too.

It’s a common mistake. Have you ever mixed up taro and ube?

There is no ube in this ube.

Fhred starts with sweet potato, brings in ube extract, and makes the whole thing honest: when you are cooking far from home, ideal ingredients are not always on the bench. The point is not to pretend. It is to adapt with care.

The joke is quick. The history is not.

When Fhred says, “We’re gonna have diabetes after this,” Liem answers with the observation that sparked this carousel: Filipino food loves sugar.

But sweetness makes more sense as part of a wider Filipino palate.

Sugarcane was cultivated across the Philippine islands before Spanish rule.

Colonial trade later transformed sugar into a major export industry. American-era refrigeration, ice cream and imported foods changed the modern pantry again.

Filipino cooks continued to absorb what arrived, adapt it and make something distinctly their own.

The diabetes line was an exaggeration but Liem went down a rabbit hole and found the International Diabetes Federation estimates that 7.5% of adults in the Philippines were living with diabetes in 2024.

Someone once told Fhred there would never be a place for Filipino food in Melbourne.

That was before Barangay . Before Palay . Before Dishes & Dialogue.

Cooking Filipino food can be more than feeding people. It can be a refusal to shrink, stay quiet, or accept that a space was never meant for you.

Sometimes rebellion looks like putting the food you grew up with at the centre of the table and saying: we’re still going to do it.

When we brought Dishes & Dialogue LIVE! to the Philippine Consulate General in Melbourne - our first ever live demo - it only came together because three local businesses had our back:
