“Kao na moo” 🐷 is a Special menu for this month

The pork stew is cooked in our 30-day-old soup from the burger month for 6 hours and it makes the pork and the sauce very umami
The soup will become a perpetual or forever soup of Busaba

This dish inspires the Chef to invent the Angry Pig Burger for Burger Month

“Paul” the chef and owner of busaba explains the key to making Busaba’s pork patties for the burger month this year

After we finished braising the pork, we strained and kept the broth, cooled it down, and kept it in the freezer.
For the next batch of patty, we use the same broth from the freezer but add the same amount of herbs as day 1, a bit of seasonings, and chicken broth just enough to braise the pork

We’ve kept using the same broth from day one until today
So the broth is 26 days old now but it’s still good even much better than day one and UMAMI😌

We’ll keep doing this until the last day of burger month
