Bringing learning to life.

This week, our 3rd year Advanced Professional Cookery students had the exciting opportunity to visit the five star luxury Marcliffe Hotel.

As part of their studies, students are exploring key aspects of a chef’s role, including menu development, stock ordering, staff induction, and training. The knowledgeable team at the hotel provided valuable insight into each of these areas.

During the visit, students toured the hotel rooms, function suites, and working kitchens, while also hearing about the hotel’s future plans.

The experience was rounded off with a meal in the brand new impressive Skylark Brasserie.

As our third year students near the end of their time with us, opportunities like this offer a meaningful glimpse into life beyond college.

A huge thank you to General Manager Bev, Head Chef Alan, and the entire team at The Marcliffe for their time and for creating such a memorable experience for our students.

Last themed menu of the academic year!

It’s hard to believe that our 3rd year Advanced Professional Cookery students are approaching the end of their studies but there is one final chance to sample a themed menu from them. They have been a massive hit so far and this one will be no exception.

Austria 🇦🇹 and India 🇮🇳 are our final destinations for the year and you can book your table via messenger.

Available dates as follows:

Wednesday 29th April lunch - bookings taken at 12pm, 1215pm and 1230pm with the restaurant closing at 2pm.

Wednesday 6th May lunch - bookings taken at 12pm, 1215pm and 1230pm with the restaurant closing at 2pm.

Over the past four weeks, a dedicated group of our 3rd year Advanced Professional Cookery students took part in a special pastry workshop, an extra‑curricular opportunity designed to push their creativity, precision, and technical skills even further.

Guided by one of our lecturers, the students produced some truly impressive work, including:

Pastillage presentation boxes & delicate petal paste flowers.

A selection of handcrafted pralines and chocolates.

A stunning caramel, pear & pecan entremet

This workshop offered an incredible additional learning experience, allowing the students to explore advanced pastry techniques out with their core curriculum.

The hard work, enthusiasm, and attention to detail shown, was outstanding throughout.

A huge well done to everyone involved in this valuable experience.

Today our 3rd year Advanced Professional Cookery students visited McWilliam Butchers in Aberdeen as part of their Advanced Meat Preparation unit.

The group had a full tour of the factory, watched demonstrations, sampled a range of products, and got a look behind the scenes at the wholesale side of the business. It was a great opportunity to see how a busy production facility operates day to day.

The visit linked perfectly with what they’re currently studying and gave them valuable real world insight to support their practical skills.

Thanks to everyone at McWilliam Butcher for making it happen.
