Le Chefeteria, a private members’ only gastronomic club on Sun Wui Road just across from Lee Garden One in the quiet of Causeway Bay, may be one of Hong Kong’s best kept secrets. With all our offerings created under the theme of “Artisanal Handmade from the Heart”, this is a must go casual fine-dining destination for Foodies offering patrons organic, GMO free artisanal breads, flavoured butters, a

nd wholesome delicacies flavoured only by our own homemade stocks, as all our chefs work without the aid of store bought chicken stock, beef stock, or vegetable stocks, instead making all our stocks from scratch! A hidden alcove on the 4th floor of a residential building, the space features a solid white quartz plating table where you can watch chefs preparing and plating your dishes directly in front of you in our stately, yet convivial dining room. We also offer a private dining room for up to 6 patrons and have at hand a balcony available for those needing to grab a bit of fresh air in between courses or for taking a private telephone call. As we do NOT turn tables in a meal service, our dining establishment presents the perfect venue to enjoy a relaxing, civilized luncheon away from the crowds in Causeway Bay with set lunch menus and business set lunch menus available from 11:30am to 2:30pm Mondays to Saturdays and leisurely brunches complete with fresh artisanal pasta kneaded and cooked directly in front of you on Sundays. In the evenings, from 6:30pm to 10:00pm, we offer only Patron Table Tasting Menus (modified willingly to fit individual patrons’ dietary constraints). At this point, the lights dim and our plating table clears to become a centre stage for our chefs to entertain our patrons with live gastronomic performances including the kneading and tossing of homemade roti breads by our Chef de Cuisine. We complete the dining experience with an expertise in wine pairing so that our patrons can savour the magic that happens when wine meets food, with wine selections specially chosen by our renowned in-house wine curator, a well-recognized wine merchant. With menu items rotated/changed weekly, menus changing constantly, and guest chefs appearing regularly with many themed seasonal wine dinners and restaurant décor adapted to reflect menu highlights, seasonal themes and festivities, Le Chefeteria takes the occasion to celebrate every little nuance, inviting you to make your every dining occasion also a celebration. 今日 (31/5) 唔單止係 5 月最後一日,仲要係超級難得嘅 🌕 Blue Moon (藍月) ➕ 佛誕 (Visakha Bucha) 🙏。 咁有紀念價值嘅一晚,Chef azmi 話點都要用一隻極致脆皮嘅西班牙烤乳豬黎 Celebrate 吓 🐖🥂

我承認,低估咗香港人「與佛同樂」嘅決心...

自從上次宣佈佛誕加開四日 Suckling Pig Menu 之後,個 Inbox 爭啲俾大家炸爆。

Chef Azmi 噚晚一邊備料一邊問我:「老闆,其實佛誕係咪即係香港嘅燒豬節?」😂

見好多人話夾唔到 Weekend 嚟,為咗撲火,我哋決定玩大佢:

有時覺得我哋間舖,根本就係一個 ”感情升溫所“! ❤️

臨近 520,廚房又開始進入瘋狂畫碟 Mode。有人問我,點解要堅持做 Hand-drawn portrait plates 咁嘥時間?

因為我見過太多次,當個女仔見到自己同另一半個樣,被畫喺隻碟上面嗰陣,佢隻眼係會發光、甚至會感動到眼濕濕嘅。🥹

一句 ”520“ 就咁講出口可能好單薄,但如果係食完一餐好滿足嘅 Fine Dining,再送上呢隻獨一無二嘅畫碟,成件事就變得浪漫!

今年母親節正日 (10 May),我哋決定走 ”原汁原味“ 路線✨

唔少客話阿媽怕油膩,所以我哋出咗個 Salt-baked Red Snapper (鹽焗紅鯛魚) Set Dinner 🐟
用鹽焗鎖住肉汁,配東南亞秘製醬汁,絕對啱長輩口味

除咗嘢食啱阿媽胃口,儀式感我哋都包辦晒:

我哋餐廳呀 Chef Azmi 真係有強迫症...
堅持!... 除咗餐尾嗰塊餅乾之外,所有嘢都要 Homemade,唔想用供應商現成貨(麵包都自己焗 bread🥖)

結果我哋平日(Mon-Thu)個 < hk$600 嘅 Everyday Fine Dining Dinner Set 其實幾... 自虐... 我哋 “Naked” Duck Confit (serve 嗰陣 “naked” 冇晒油但爆味😋),由4年前已經開始「滷」緊,好似中式滷水咁一直「餵」住🦆💥 絕對係 savory and powerful!

仲有 lobster bisque、仲要 Chef 表演現場 Roti Tossing「甩」兩下即焗 Freshly made roti 俾你蘸湯。

其實我哋想大家 Chill 啲食好嘢,氣氛 cozy & celebratory,鼓勵 food sharing(每張檯都永久擺定個 Sharing plate)

今日想同大家些牙個冷知識: 喺印尼菜入面,咖喱係一個進化過程。 水汪汪嗰陣叫 Gulai 👉🏻 煮到杰身出油叫 Kalio 👉🏻 慢火將所有醬汁 100% 收乾入牛肉度,變成 Dry Curry,呢個最高境界先叫 Rendang!

真正嘅 Rendang 係極度考功夫,由 Scratch 開始做,所以成本一啲都唔平。而且為咗展現香料嘅層次,正宗做法係 唔辣 嘅!

我哋兩位 Chef 係地道 Padang 人,用緊祖傳食譜去煮,最真實嘅 Rendang Padang。

食好東西,其實是一種體驗,不一定要拘謹。

今日又有個小朋友嚟體驗人生第一次 Fine Dining。佢好好玩,食食下行去 Open Kitchen 前面睇 Chef 表演 Culinary Performance,睇得幾專注 😂

其實好多家長都想同小朋友食餐好嘢,但又怕去傳統 Fine Dining 嗰種拘謹,驚小朋友坐唔定嗌出嚟會尷尬。但我哋揀做 Casual Fine Dining,有 Napkins 而不用 Table Cloth 咁 Formal。家長可以放鬆,小朋友又可以感受到食好嘢嘅樂趣。

想小朋友學識品嚐好嘢,真係唔洗太繃緊。連 BB 凳、小朋友餐具我哋都有晒。
一家大細舒舒服服食 Fine Dining,可以好簡單🍴👶

以前一直諗,點樣可以令個 Tiramisu 再好食啲? 最後發現答案好簡單:Back to Basic,但要做到極致✨

當我哋決定連 Mascarpone Cheese 都自己整,連 Lady Fingers 都自己焗嘅時候,我就知我哋返唔到轉頭。因為新鮮食材嗰種純淨、無防腐劑嘅味道,真係呃唔到人!
尤其是用咗 ”Medium Rare“ 嘅日本蘭王蛋,嗰種橙紅色嘅蛋黃香,配埋浸滿 Espresso 同 Dark Rum 嘅自家製餅底... 🥃☕️

今個節日版換咗件粉紅色衫 (紅菜頭粉),但內心依然係那個最經典、最醇厚嘅 Tiramisu。 有客話這可能是他吃過最好的,我覺得,這就是對我們 “自找麻煩” 最大的肯定😂
